Harvesting yucca to roast
We use a digging stick or shovel to loosen the soil, then pull the root free, then trim off the tough outer layers.

Roasting yucca is as simple as cutting the root or inner stalk into chunks and cooking it slowly over coals or in an oven until it turns soft and sweet. Once roasted, you peel off the outer layer and eat the tender, nutty inside.

Roasted yucca
After the fire has burned down to hot coals, we harvest yucca by pulling out the softened root (inner stalk) with a digging stick or tongs. The heat loosens the fibers, so the roasted yucca lifts out easily and the sweet, tender inside can be peeled and eaten right away.
